Chicken Chile Relleno Cheese Dish

First things first, I found this recipe on Pinterest. I borrowed the photo from Buttoni's Low Carb Recipes. And lastly, I changed the name of the dish from Chicken Chile Relleno Casserole to Chicken Chile Relleno Cheese Dish. Long story short, my husband will not eat casseroles. His mom made casseroles all the time, and apparently, they weren't very good ones. Hence, Cheese Dish instead of Casserole. Crazy, but it's true.

Words cannot describe how yummy this dish is! And it's low carb!!!

To make this dish, you have to roast poblano peppers, and I hadn't done that before. It was surprisingly easy! The recipe calls for onions, and I don't do onions, so I left those out. I used more garlic than the recipe called for, and it turned out delicious!!

It has been added to our meal rotation, and we are looking forward to making it again.

Podcasts & Pinterest

Screen Shot 2015-04-15 at 1.01.50 PMPodcasts are my newest addiction. Oh my goodness. I get in my pickup to go to town, and the first thing I have to do is pull up my podcast app so I can start the latest episode.

Serial is the first podcast I have tried, and I'm hooked. Hook. Line. And Sinker. Hooked! Let me tell you a little bit about the podcast and the current story.

Serial is a podcast from the creators of This American Life, and is hosted by Sarah Koenig. Serial tells one story – a true story – over the course of an entire season. Each season, we'll follow a plot and characters wherever they take us. And we won’t know what happens at the end until we get there, not long before you get there with us. Each week we bring you the next chapter in the story, so it's important to listen to the episodes in order, starting with Episode 1.(taken from the Serial website)

Since I am new to the whole podcast scenario, I am looking for new ones to listen to. Do you have any suggestions?

Now, you might be wondering why this is titled Podcasts & Pinterest. Some of you might have already guessed, but Pinterest is another addiction of mine.  A friend of mine, who is not a Pinterest fanatic like myself, says she can find everything on Google that she can find on Pinterest. I think she can, but it will take her longer than it would if she were on Pinterest. Just my two cents. Plus, I like all the photos. 🙂

Anywho, if I have some free time to sit down at my computer, I like to peruse Pinterest and listen to my Podcasts.


Tap, Tap, Tap…Hello? Anyone Out There?



My name is Julie, and I am a bad blogger! 🙂

I've really neglected Another Chance Ranch for several months now, and I have got to get back to it. I've been missing all my friends, and fellow bloggers.

Let me catch you up on my little life.

The most exciting thing is that my nephew graduated from the USAF Basic Military Training. We spent the weekend with him in San Antonio, TX and had a great time! It was pretty much a family vacation, with the whole family. Well, except for McD, he had to stay home.

I've been sewing, reading, more sewing, and more reading.

I'll tell you all about the book club a few friends and I started, and what we are reading next, but that will be tomorrow.

I started taking Plexus, and guess what…it works! I have tried nearly everything, but this stuff gives me energy without making me shaky, curbs my appetitie, helps me sleep, and has stopped my weight gain.  Most everyone else will tell you that it is helping them lose weight, but my situation is a lot different.  I have to take Tamoxifen, which is an estrogen blocker – just another part of my battling cancer, but it makes you gain weight. And oh, have I gained the weight!  But Plexus has helped me stop the weight gain, AND I am actually burning fat! If you are interested let me know, or just go to My Plexus page.

I've been testing all kinds of pins on Pinterest, and will be posting those to my PinTest category soon.

Lastly, and most importantly, on May 17th I celebrated 3 years cancer free!!!

I better get off of here so I can finish our book for book club tomorrow. We are reading Wild by Cheryl Strayed right now, and I still have half the book to finish before tomorrow. Yikes!

Today, one quilt might get finished but, no promises. And I will apologize now – I cannot post photos of said quilt until after Christmas. Sorry folks, but I can't risk ruining the surprise.

The other pinning I have been doing is on Pinterest, of course. Check out this board I found, it is so full of "Useful Ideas" that I had to share it with you! We are trying to save some money here in our household, as many are, and this pin was perfect.

Chilly Pepper & Chicken and Dumplings

She got a little chilly and practically buried herself in the blanket.  (I helped pull the over up over her back.)

The weather is getting cooler, and it is time for some great comfort food recipes!  I just happened to try a new recipe for Chicken & Dumplings the other day, and it was Yummy!!! I just have to share it with you!

Slow Cooker Chicken & Dumplings

This was a super duper easy recipe. You’ll have to follow the link for the recipe because it isn’t mine, but I will tell you how I plan to change it when I make it again.

McD loved the taste, but said it could use more of the soupiness.  He didn’t know it was just Cream of Chicken soup, so I plan on adding more of it and maybe chicken broth instead of water. We are also huge fans of all things spicy, so I plan on adding some jalapenos to the crock pot next time as well.

I am getting hungry just thinking about it. Try it, and let me know what you think. It was a winner winner, chicken dinner here at our house.




The GM Cleanse: Day One

Oh, the "D" word has been coming up in our house a lot lately.


Not because summer is coming and we want to be Speedo swimsuit ready. It is just because we want to feel better.

I did not believe my doctor when he told me that most cancer patients gain weight instead of losing weight. I was ready to lose ten pounds when I was diagnosed. Darn my luck, I gained even more weight. Then to make my weight matters even worse, I was put on Tamoxifen and the weight just keeps piling on. I am going to look like the Goodyear Blimp if I don't get a handle on it!

A friend of mine was taking Tamoxifen and she had the same problem with the weight just piling on, so she stopped taking it. McD tells me that is not an option for me, and that I will take it the full five years.

So, now you know the reasons we are starting this cleanse. I contemplated doing the cleanse, and then writing about it later but really I might need this to keep me accountable.

I found the GM Cleanse on Pinterest, and believe it or not we have done this once before. I lost 9 pounds the first time, but I did not work out. This time, I am working out and doing the cleanse. We are using this to jump start our healthy eating lifestyle.  Last time we fell off the healthy eating wagon, and gained everything back.

I am kind of competitive, so I am going to try to be competitive with myself. Weird, I know. I bought a fitbit, and it should be here today. I am so excited!

fitbitIt tracks your steps, miles, calories burned, sleep patterns, etc. Be sure to click on the fitbit link if you are interested in it, because I am not going to go into detail on it here. Maybe another day.

Today is day one of the GM Cleanse, which means we are eating fruit all day!! Yum! I can handle this!

I will tell you how today goes in the morning. 🙂


Shredding Chicken – PinTest


Several weeks ago, I saw a tip on Pinterest that looked too good to be true. Honestly, the only bad thing about this helpful tip is that you have a few more dishes to wash. That's it.

Jane, from This Week for Dinner, wrote a post about how to shred chicken with your Kitchen Aid mixer. Someone pinned it, and now there are happy cooks all over the place!

I wanted to try a new recipe with shredded chicken, just so I could try this tip, and it worked!  Like a charm!! 

The recipe I tried was the Chicken & Dumpling Casserole. If you haven't tried it, you should!
