So, what did I do? I went to Pinterest, of course!

I threw it all together, tossed it in the oven and 37 minutes later we had some of the best Chicken & Dumpling Casserole

I recommend using grilled, rotisserie, or seasoned chicken of some kind.  But Steph from Plain Chicken, recommended that in her recipe. I wouldn't change a thing. 

And I will make it again!!

Lazy Cake Cookies – PinTest

I'm a Lazy Mom got this recipe from Lazy Mom Beth, and I found it on Pinterest.

I've been wanting to make a Pecan Pie Cake, but when I looked at the recipe late last night I decided that it was going to have to wait for another time. It was just too time consuming for 9 o'clock at night. I was pooped and ready for bed! I didn't get to bed until almost 11 pm, but who's keeping track. 

I just happened to have all of the ingredients for this Lazy Cake Cookie, and it sounded good. Not to mention, EASY! 

I followed the instructions to a T, (where did that saying come from anyway?), and the only thing that I noticed that was different about my experience was that I had to leave mine in the oven for approximately 23 minutes instead of 20. Another thing I did was to put foil over it those last few minutes so it didn't brown anymore. 

We had a Life Group luncheon at church and I was bringing the dessert. It was a hit! I've now had three pieces, and am leaving the rest for McD. They are very rich, but go wonderfully with a tall glass of milk! They are not great for this girls buttocks (do you hear Forrest Gump say that like I do?), but that is why I am going for a walk. 

It is a gorgeous day, get out there and enjoy what the good Lord created!

PinTest – Spicy White Queso

We love our queso, but typically we use Velveeta cheese. I found this recipe on Pinterest and just had to try it.

The main ingredient is cream cheese. 

Sounds yummy, doesn't it?

Well, while it was good, we will be going back to our old stand-by recipe with Velveeta.  The name of this recipe indicates that the dip would be spicy, but it wasn't. I spiced it up a bit more by adding Hot Rotel instead of the regular stuff.

A Secret Family Recipe

Does everyone remember Lady T? Well, she is a good friend of mine that just happened to share her family's secret recipe with me.  It isn't really a secret, secret.  It's just that well, she comes from an Italian family, and this is their favorite lasagna recipe.  I'm thrilled she shared it with us.

This is the recipe she sent to me.

1 lb ground beef
1 jar spaghetti sauce ( I use Prego original)
1 package (25 oz) frozen sausage or cheese ravioli (I always use cheese & just get the Walmart brand…they're square)
1 1/2 cups (6 oz) shredded mozzarella

Brown & drain the ground beef. In a greased 2 1/2 qt baking dish, layer a third of the sauce, half of the ravioli (still frozen!) and beef & 1/2 cup cheese; repeat layers. Top with remaining sauce & cheese. Cover & bake at 400 degrees for 40-45 minutes or until heated through.

It's pretty simple! Just layer everything & bake it! I don't always follow everything to the exact measurements. I usually overdo it with the cheese! We also like to add fresh spinach & mushrooms sometimes. I've even been known to put a little parmesan or feta in the mix, but I love cheese. Hope you guys like it as much as we do! Don't tell anyone that our favorite lasagna recipe is so simple…what would all of the other Italians think? 😉

Well, my dear, I think everyone will love this recipe, even Italians!  McD and I have decided to make a few changes.  We want a little more meat with it, so next time we are going to add a half a pound of sausage. 

McD made this for me right after my surgery, and it was delicious! I can't wait to have it again.

Encourage One Another – Potluck Recipe

Over at Testify the blog I asked everyone to share their favorite potluck supper recipes.  So, it is only right that I link up and add one too.

I chose a recipe that I have posted in the past.  As I was scrolling through all my recipes and photos I ran across these, and they made my mouth water.

Combine everything in a bowl, mix it up, refrigerate, and ENJOY!

As you can tell by the photo, I forgot one of the ingredients when I made this for the photos. Can you tell what I forgot?

As for the measurements…well, I just kind of threw it all together.  I think I used about a 1 1/2 pounds of the Strawberries, 1 whole Pineapple, 1 1/2 cups of Blueberries, forgot the Kiwi, 1/4 cup of conf. sugar, and about 1 1/2 teaspoons vanilla.  I add a dollop of Cool Whip to each serving to make it extra yummy!


Now I have a little confession to make.  I don't like going to potluck suppers. There, I said it.  I am not really a joiner when it comes to things like that.  But I still like all the recipes. :)  Who knows, maybe one day I will want to become a joiner.

Summertime Tomatoes – Red Gold

The other day I got a package in the mail.

I couldn't wait to open it. You see, I knew this package was coming; I had been waiting on it.

I just love the box! It looks just like a wooden crate of fresh picked tomatoes.  Just looking at it makes my mouth water.  I love, love, love tomatoes.

When Red Gold contacted me to host a giveaway I jumped at the chance.  I love Red Gold tomatoes, and have been using them for a while now.  I even introduced my sister to them, and she is loving them too.

Here's what came in the box.

Aww, a letter.  Who writes letters anymore?  We really need to start doing that again.  You know, real letters. But wait, this post is about tomatoes, Red Gold Tomatoes.

The other day they sent me a nice little recipe to try, so I thought I would share it with you too.

Best Ever Chicken Fajitas

ChickenFajitascrop10oz Stir-fried chicken strips, peppers, onions and cheese are simmered in a zesty sauce and wrapped in warm tortillas.

Recipe Overview:
Servings:    6
Preparation Time:    10 minutes
Cook Time:    10 minutes

2        tablespoons vegetable oil
1        pound boneless skinless chicken breast, cut into strips
1        green bell pepper, cut into strips
1        onion, sliced
1        (10.75 ounce) can cream of mushroom soup
2        (10 ounce) cans Red Gold® Diced Tomatoes with Green Chilies , drained
8        (8 inch) flour tortillas
1        cup shredded Monterey Jack cheese

In large skillet heat oil, add chicken and cook until browned. Add green bell pepper and onion, cook until crisp tender.
Add soup and RED GOLD® DICED TOMATOES with GREEN CHILIES; heat through.
Spoon cup of the chicken mixture down the center of each tortilla. Top with cheese. Fold tortilla around the filling.
